Sourced from Western Australian barrels crafted from native red gum timber and formerly used to mature Australian port, these chunks deliver rich colour and layered complexity to your spirit. The seasoned wood imparts notes of dried fruit, raisin and plum, balanced by subtle caramel sweetness, gentle spice and a soft earthy warmth unique to red gum.
Perfect for ageing mash & grain-based whiskies made using the Pot Condenser, or neutral spirit made from the Reflux Condenser.
Soaking Suggestions:
500g of chunks will age 2.5L of 40% spirit in 7-8 days or to taste.
500g of chunks will age 2.5L of 60% spirit in 4-5 days or to taste (see the 93/50/60 method)
