3 Easy Ways to Age Your Spirits with Pure Distilling Barrel Chunks

In this article, we’ll explore three effective methods for ageing your spirits using Barrel Chunks. But first, what makes them such a valuable tool for home distillers?

Pure Distilling Barrel Chunks are cut from genuine, freshly emptied barrels sourced from distilleries around the world. After their time ageing commercial spirits, these barrels are repurposed into smaller chunks ideal for home use.

When soaked in your spirit, they release deep, authentic flavours. This creates results comparable to store-bought spirits at a fraction of the cost.

Barrel Chunks are a great alternative to flavouring essences, especially if you enjoy your spirits neat, over ice, or want to enhance the character of your cocktails.

1. The Classic Method

This is the most popular and straightforward method for using Barrel Chunks, and it consistently delivers excellent results.

Start by adding 2.5 litres of filtered spirit to a 4-litre glass jar, which you can find at most home brew stores. We recommend using a spirit at 40% ABV, although you can adjust this to suit your personal preference. Next, add the 500g of Barrel Chunks into the jar.

Let the spirit soak for the time indicated on the label. This will vary depending on the type of chunks used. For instance, Bourbon Chunks generally infuse faster than Rum Chunks.

Taste test periodically using a syringe or shot glass. Once you are happy with the taste, pour off the spirit and filter it through a paper/coffee filter to remove any fine particles or dust.

Your spirit is now ready to enjoy.

TIP – Never use demijohns to age your spirits as the chunks expand during the ageing process, meaning they can get stuck in the demijohn! Instead use a 4-litre glass jar with a wide mouth as shown here.

2. The 93/50/60 Method

This method takes things to the next level. The 93/50/60 technique is one we’ve found to produce an exceptional, top-shelf result.

Why does it work so well? By soaking the Barrel Chunks in spirit at 60% ABV, the higher alcohol content extracts deeper and more complex flavours from the wood. When paired with our double-distilled spirit, the outcome is a remarkably refined and premium-tasting product.

Firstly, we need to double distil our spirit. This provides us with an already filtered high-strength spirit which we can use to soak our chunks. 

How to double distil:

  1. Complete your first run as per normal
  2. Run the collected product through the Smart Filter. We would recommend filtering it through at 50% ABV to save time. This is the highest strength of ethanol a carbon filter can process. Once you’ve filtered your product, there’s no need to filter it again if you’re re-distilling as we’ve already captured all the volatile organic compounds that are present from the wash
  3. Pour the filtered product into the boiler, and fill up with water to the ‘MAX’ line in the boiler
  4. Run the system as per normal.

Now we have a batch of high-grade double distilled spirit! Remember, there is no need to run this back through the Smart Filter.

How to age:

  1. Dilute the double distilled spirit to 60% ABV by adding water and mixing well
  2. Add 2.5L of 60% ABV spirit to a 4-litre glass jar & add 500g of Barrel Chunks, and leave to age.
  3. The chunks will infuse flavour much quicker than normal! Because the higher strength spirit is breaking down the chunks at a quicker rate, it is important to continuously test and take the spirit off the chunks a few days before suggested on the label. For example, we’ve found ageing Whisky Chunks for 6-7 days using this method was perfect. Over-ageing the spirit can lead to an excessive extraction of oak compounds, particularly tannins, which may overwhelm the spirit’s natural flavours. As a result, the spirit can develop dominant woody or bitter notes and a noticeably dry, astringent mouthfeel.
  4. Once you are happy with the taste, pour off the spirit and filter it through a paper/coffee filter to remove any fine particles or dust
  5. Next, dilute to your preferred strength by adding water, and enjoy!

TIP – For a premium cask-strength spirit, set aside a bottle at 60% ABV. You can re-distil the spirit multiple times before soaking on the chunks for an even more refined result that’s sure to impress friends and family.

3. Re-soaking Method

Our Barrel Chunks can be re-used for additional soaks! While re-soaking takes longer and may slightly reduce the taste quality, it’s a cost-effective way to get more value from your purchase.

As a guide, the second soak typically takes 2 to 3 times longer than the first, and the third can take several weeks. To boost flavour in the third soak, consider adding a dash of Pure Distilling Essence to taste.

After the third soak is complete, the chunks are great for throwing on the fire and the Bourbon Chunks can be used for smoking meats.
